Burmese Air-Fried Chicken & Dipping Sauce

A healthy alternative to fried chicken with staple herbs and spices. This can be a tasty snack or a meal with rice and salad.

Ingredients

  • 600g chicken thigh fillets, chopped into 3cm-long strips
  • Cooked rice
  • Mixed lettuce leaves
  • Coriander, to taste
  • Spray cooking oil
  • 1 tsp turmeric powder
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 1 tsp ginger powder
  • 3 tbsp plain flour
  • ½ tsp chilli powder
  • 3 tbsp soy sauce
  • 1 tsp fish sauce
  • ½ tsp chilli powder (optional)
  • Juice 1 lime
  • 2 tsp minced ginger

Method


  • In a medium-size bowl, combine all dry rub ingredients. Add in the chicken and toss until well coated.
  • Lightly spray seasoned chicken with light cooking oil and cook in an air fryer for 15 mins on 180°C. Turn chicken halfway through to ensure both sides are cooked evenly.
  • While chicken is cooking, combine all dipping sauce ingredients in a small bowl and set aside.
  • Once chicken is done, plate up with rice, a bed of mixed lettuce and dipping sauce.
  • Top with coriander to taste and serve immediately.
  • Tip: Use drumsticks as an alternative to thigh fillets, but double the spice rub mix for 1-1.2kg drumsticks.
