Burmese Air-Fried Chicken & Dipping Sauce
A healthy alternative to fried chicken with staple herbs and spices. This can be a tasty snack or a meal with rice and salad.

Ingredients
- 600g chicken thigh fillets, chopped into 3cm-long strips
- Cooked rice
- Mixed lettuce leaves
- Coriander, to taste
- Spray cooking oil
- 1 tsp turmeric powder
- 1 tsp paprika
- 1 tsp garlic salt
- 1 tsp ginger powder
- 3 tbsp plain flour
- ½ tsp chilli powder
- 3 tbsp soy sauce
- 1 tsp fish sauce
- ½ tsp chilli powder (optional)
- Juice 1 lime
- 2 tsp minced ginger
Method
- In a medium-size bowl, combine all dry rub ingredients. Add in the chicken and toss until well coated.
- Lightly spray seasoned chicken with light cooking oil and cook in an air fryer for 15 mins on 180°C. Turn chicken halfway through to ensure both sides are cooked evenly.
- While chicken is cooking, combine all dipping sauce ingredients in a small bowl and set aside.
- Once chicken is done, plate up with rice, a bed of mixed lettuce and dipping sauce.
- Top with coriander to taste and serve immediately.
- Tip: Use drumsticks as an alternative to thigh fillets, but double the spice rub mix for 1-1.2kg drumsticks.
