Vegan Coconut & Mango Jelly Squares

Indulge in the tropical flavors of our Vegan Coconut & Mango Jelly Squares. These delightful treats offer a refreshing blend of coconut and mango, perfect for a guilt-free dessert.

Ingredients

  • 250g mango flesh from 2 small mangoes, diced
  • 3¼ cups coconut water
  • 4 tsp agar agar powder
  • ¼ cup & 2 tbsp pure maple syrup
  • 2 cups coconut milk
  • Diced mango, lime, flowers & coconut flakes

Method


  • In a food processor, blend mango and coconut milk.
  • Over medium-high heat, combine coconut water and maple syrup in a medium saucepan. Add agar agar powder and whisk until dissolved.
  • Remove from the heat, then stir through the mango coconut mixture and whisk to combine.
  • Fill moulds or pour into a square container and refrigerate to set for at least 3 hours. Remove jelly from the moulds or cut into squares and top with lime wedges, mango, flowers and coconut flakes.
  • Tip: Use 12 tsp gelatine powder to replace 4 tsp agar agar powder.
