Vegan Coconut & Mango Jelly Squares

- 250g mango flesh from 2 small mangoes, diced
- 3¼ cups coconut water
- 4 tsp agar agar powder
- ¼ cup & 2 tbsp pure maple syrup
- 2 cups coconut milk
- Diced mango, lime, flowers & coconut flakes
Method
- In a food processor, blend mango and coconut milk.
- Over medium-high heat, combine coconut water and maple syrup in a medium saucepan. Add agar agar powder and whisk until dissolved.
- Remove from the heat, then stir through the mango coconut mixture and whisk to combine.
- Fill moulds or pour into a square container and refrigerate to set for at least 3 hours. Remove jelly from the moulds or cut into squares and top with lime wedges, mango, flowers and coconut flakes.
- Tip: Use 12 tsp gelatine powder to replace 4 tsp agar agar powder.
