Cheese Flan
Who knew a savoury flan is actually very similar to a crustless quiche? This version has all the good things in it — spinach, bacon, cheese and onion — but you can mix and match your own fillings to taste. Adding a touch of flour to the mixture creates a light crust. Perfect for lunch prep or a light dinner.

Ingredients
- 150g grated cheese, divided
- 40g parmesan, finely grated
- 100g bacon, roughly chopped
- ½ red onion, finely sliced
- 1 cup baby spinach leaves
- 1/3 cup self-raising flour
- 1½ cups milk
- 4 eggs
- Salt & pepper, to taste
Method
- Pre-heat oven to 180°C. Grease a pie dish.
- Gently cook the bacon and onion over medium-high heat until softened and caramelised, then allow to cool.
- Set aside approx. ¼ cup grated tasty cheese. Place the grated tasty cheese, parmesan, bacon, onion and spinach leaves in a bowl with the flour and toss together until combined. Spoon the filling into the pie dish.
- Whisk the milk and the eggs, then season to taste. Pour the egg mixture over the filling, tapping the dish on the bench gently to get rid of air bubbles.
- Sprinkle the remaining grated cheese over the top and bake for 45-50 mins until golden and set.
- Serve warm or cold.
