Roasted Leek, Goat’s Cheese & Avocado Salad

This is such a beautiful dish to have in autumn. The leeks and onions become caramelised and sweeten up in the oven, adding a gorgeous depth to the salad.

Ingredients

  • 5 medium trimmed leeks, washed and sliced 3cm thick
  • 2 brown onions, sliced into quarters
  • 3 tbsp extra-virgin olive oil
  • 2 cups kale, washed & roughly chopped
  • 2 avocados, peeled & diced
  • 2/3 cup goat’s cheese
  • 1 cup plain Greek yoghurt
  • 1 cup tightly packed fresh coriander, parsley, dill, basil & mint
  • 1 garlic clove
  • ½ tsp Celtic sea salt
  • Black pepper, to taste

Method


  • Combine all salad dressing ingredients in a food processor and blitz until smooth.
  • Preheat the oven to 190°C. In a bowl, mix the leeks and onions with 3 tbsp olive oil and season with salt and pepper.
  • Place leeks and onions on a lined baking tray and roast for 25-30 mins or until softened, turning once or twice.
  • Place kale into a large bowl and add avocado. Pour the dressing over the leeks and pile on top.
  • Scatter goat’s cheese over and serve.
