Mango, Snow Pea & Sprout Rice Paper Rolls

Orange fruits and vegetables such as mangoes contain beta-carotene, which is converted into vitamin A in the body. This important vitamin is needed to support healthy skin and immune function. Mangoes are also rich in zeaxanthin, an antioxidant that plays a protective role in eye health and helps reduce the risk of macular degeneration.

Ingredients

  • 10 round rice paper sheets
  • 1 cup finely shredded red cabbage
  • 1 avocado, cut into slices
  • 1 small red capsicum, thinly sliced
  • 1 medium cucumber, cut into matchsticks
  • 1 mango, sliced
  • Handful baby spinach
  • Handful snow pea sprouts
  • Handful mint
  • Sweet chilli sauce, to serve

Method


  • Dip rice paper round into a bowl of warm water for 10 secs to soften it slightly.
  • Place it on a clean surface and then top it with your filling ingredients. Fold each end and then roll to enclose
  • Serve with sweet chilli sauce.
