Thai Black Rice Salad

Black rice is a fantastic alternative to white rice. It has a chewy, nutty texture and is a great source of anthocyanin, a powerful antioxidant. You’ll be able to buy black rice from most supermarkets or health food stores.

Ingredients

  • 1 cup black rice
  • Large handful fresh Thai basil leaves, chopped
  • ¼ sesame seeds
  • 1 thumb fresh ginger, grated
  • 1 thumb fresh turmeric, grated
  • 1 red chilli, seeds removed, finely diced
  • Juice 1 lime
  • 2 tbsp tamari sauce
  • 1 tbsp palm sugar (optional)
  • 3 spring onions, finely sliced

Method


  • Bring 2 cups of water to the boil in a large saucepan, add the black rice and simmer, covered, for 35 mins. Remove from the heat and stand, covered, for 5 mins.
  • Add the black rice to a bowl along with the Thai basil, sesame seeds, ginger, turmeric, chilli, lime juice, tamari sauce, palm sugar and spring onions. Mix together until well combined and serve.
  • Top with some extra chilli, ginger and spring onions.
