Cauliflower Vegetarian Pizza

A versatile pizza recipe that can use an array of vegetables as toppers. Some vegetables prefer to be cooked to accentuate the flavours; however, with this recipe, use all the toppings in the oven at the same time. Tuck the spinach in with the other ingredients but if you do prefer it raw, you can add it on top afterwards for a little touch of freshness.

Ingredients

  • 1 x Cauliflower Pizza Base
  • Red onion, sliced
  • Mushrooms, sliced
  • 1-2 cloves garlic, finely chopped
  • Olives, halved
  • Cherry tomatoes, halved
  • Spinach leaves

Method


  • In a bowl, combine cauliflower, egg, almond meal, garlic, seeds and nutritional yeast flakes.
  • Scoop out the mixture with a spoon and then press evenly on the baking tray to make a square shape.
  • Sprinkle evenly with herbs.
  • Place in oven for 12-15 mins.
  • Remove base and let cool slightly.
  • Add toppings to pizza base.
  • Place under a high-heated grill for 5-8 mins.
  • Serve warm.
