Simple Salad for the Soul

This is the kind of salad that is nutritionally sound and can be assembled when ready to eat.

Ingredients

  • 2 zucchini, sliced lengthways
  • 1 small pumpkin, cubed
  • 2 cups cauliflower florets
  • 2 tbsp mixed herbs
  • Squeeze fresh lime
  • 2 tbsp olive oil
  • 2 fresh cos lettuces, washed
  • 2 cups basil
  • 1 cup coriander
  • 2 cups rocket
  • 2 radishes, sliced
  • Olive oil, to serve

Method


  • Preheat oven to 200°C.
  • Sprinkle zucchini, pumpkin and cauliflower with mixed herbs, lime and olive oil, season to taste and bake in the oven on 2 large, lined trays for 40 mins. Stir intermittently so the vegetables cook evenly.
  • Remove from oven and place in bowls.
  • Place salad ingredients in bowls.
  • Season to taste and dress the salad with a squeeze of lemon and olive oil.
