Simple Salad for the Soul
This is the kind of salad that is nutritionally sound and can be assembled when ready to eat.

Ingredients
- 2 zucchini, sliced lengthways
- 1 small pumpkin, cubed
- 2 cups cauliflower florets
- 2 tbsp mixed herbs
- Squeeze fresh lime
- 2 tbsp olive oil
- 2 fresh cos lettuces, washed
- 2 cups basil
- 1 cup coriander
- 2 cups rocket
- 2 radishes, sliced
- Olive oil, to serve
Method
- Preheat oven to 200°C.
- Sprinkle zucchini, pumpkin and cauliflower with mixed herbs, lime and olive oil, season to taste and bake in the oven on 2 large, lined trays for 40 mins. Stir intermittently so the vegetables cook evenly.
- Remove from oven and place in bowls.
- Place salad ingredients in bowls.
- Season to taste and dress the salad with a squeeze of lemon and olive oil.
