Broccolini with Pistachios

Pistachios are a great match with broccolini. Try to keep the stalks a little firm when cooking it. Caulilini works well with this recipe too.

Ingredients

  • 2 tbsp garlic-infused olive oil
  • 3 bunches broccolini
  • Pinch salt & pepper
  • ¼ cup pistachio kernels, roughly chopped

Method


  • Heat a medium-sized frypan over medium heat.
  • Add olive oil, broccolini, salt and pepper and sauté for 5-6 mins or until tender.
  • Place on a plate, check seasoning and scatter over pistachios.
  • Note: If you don’t have broccolini, you can use broccoli.
