Pineapple Salsa
Do you like your salsa to be fresh? Sweet? Spicy? Tangy? How about all the above? This salsa goes perfectly with
a simple barbecue and gets better the longer it sits in the fridge.

Ingredients
- 1 small fresh pineapple, peeled & diced
- 1 medium red capsicum, diced
- 1 red onion, diced
- 3⁄4 cup chopped coriander
- 1 jalapeno, finely chopped
- 2 tbsp fresh lime juice
- 2 tsp honey
- 1⁄2 tsp salt
Method
- Place the pineapple, capsicum, red onion, coriander and jalapeno in a bowl and stir to combine.
- Place the lime juice, honey and salt in a small jug and whisk together.
- Pour the dressing over the salsa and toss through.
- Cover and refrigerate before serving.
- Note: You can swap green capsicum for the jalapeno if you don’t like spicy dishes or add extra if you like it hot.
