Cherry Clafoutis
As we leave our property, we drive past row after row of cherry trees. For the last couple of months each year, every trip is spent peering through the trees, judging the growth and abundance of the year’s cherry crop and, most importantly, checking if they will be ripe for Christmas. To not eat cherries at Christmas is unthinkable, so I had to include them in this delicious finish to our Christmas menu.

Ingredients
- 20g butter
- 75g plain flour
- 100g caster sugar
- ¼ tsp salt
- 3 large eggs
- 250mL milk
- 1½ tsp vanilla extract
- Zest 1 orange
- 500g cherries, fresh or frozen
Method
- Preheat oven to 180°C.
- Rub the butter in a thick layer around the inside of a shallow 20cm baking dish.
- Place the flour, sugar and salt in a large mixing bowl.
- In a separate bowl, mix the eggs with the milk, vanilla and orange zest.
- Pour the egg mixture into the dry ingredients and mix to a smooth batter.
- Pour 1 cup into the bottom of the baking dish and bake for 10 mins (this helps the cherries to stay towards the top of the dish.
- Remove from the oven and gently pour in the remaining batter.
- Gently place the cherries into the mixture and return the dish to the oven to bake for a further 50 mins.
- Cool for 30 mins before serving with a dusting of icing sugar.
