Broccoli Poppers with Avocado & Kale Dip

Broccoli poppers are delicious! There is no need to feel bad about a little frying. Ensure your oil is hot enough so the poppers don’t absorb it and use the best-quality oil you can find. Serve with nutrient-dense dipping sauce.

Ingredients

  • 1½ cups flour
  • 1 cup fine breadcrumbs
  • 1 cup soda water, plus extra
  • 1 tsp sumac
  • Pinch salt & pepper
  • 1 head broccoli, cut into florets
  • Rice bran oil, for frying
  • 1 avocado
  • 100g kale
  • Juice 1 lemon
  • 2–3 tsp olive oil
  • Pinch salt & pepper

Method


  • Combine flour, breadcrumbs, soda water, sumac, salt and pepper in a bowl and mix well. If the mixture is too dry or wet, add more water or flour as needed. You want a thick pancake batter consistency.
  • Place broccoli in a steamer or microwave steamer and par-cook for about 2-3 mins.
  • Fill a high-sided frying pan with 2cm oil and heat over medium heat.
  • Place paper towel on a plate ready to drain cooked poppers.
  • Dip broccoli into the batter, gently shake off excess and carefully place in the oil.
  • Cook for about 90 secs on each side, drain on paper towel.
  • Place avocado, kale, zest and juice of lemon and 2 tbsp olive oil in a blender and blitz until you get a consistency you like. Add more olive oil if needed and season to taste with salt and pepper
  • Tip: You can swap the broccoli for cauliflower.
