Lamb Souvlaki with Tzatziki

Ingredients
- 500g lamb backstrap (or your preferred cut)
- Olive oil
- Oregano sprigs
- Salt & pepper
- Iceberg lettuce, shredded
- 3 tomatoes, thinly sliced
- 1 brown or red onion, thinly sliced into rings
- Pack of 4 white pita breads
- 1 tub of Chris’ Homestyle Tzatziki Dip or Chris’ Homestyle
- Tzatziki and Roasted Garlic Dip
- Lemon wedges, to serve
Method
- Preheat oven to 220°C.
- Place lamb in baking dish and marinate with olive oil, oregano, salt and pepper.
- Place lamb in oven for approx. 28 mins or until slightly crispy on the outside.
- Take lamb out of the oven and leave to rest for 5-10 mins.
- While lamb rests, heat pita bread either in a pan or in the oven.
- Thinly slice your lamb on an angle.
- We recommend starting with pita, then spreading a thin layer of Chris’ Tzatziki on the bottom, then place lettuce, tomato and lamb. Top with onion pieces and add a few more dollops of Chris’ Tzatziki on top to finish.
- Top with a squeeze of fresh lemon. Enjoy.
