Ingredients
- 2 large bananas (1 cup + 1/3 cup mashed)
- 2 tbsp coconut oil
- 3 tbsp sweetener of choice
- 1 tbsp vanilla extract
- 1 tsp apple-cider vinegar
- 2 flax eggs (2 tbsp flax meal + 6 tbsp water, combined)
- 1 tbsp coconut cream
- 1 cup chickpea, buckwheat, oat or almond flour
- ½ cup protein powder
- 1 tsp baking soda
- ¼ tsp salt
- ¾ cup Brookfarm Natural Muesli Macadamia Cranberry
Method
- Preheat oven to 175°C and grease and line a loaf tin. Combine the dry ingredients (except the muesli) in one bowl and the wet ingredients in another bowl.
- Stir the wet ingredients into the dry, then fold in muesli and mix until just combined.
- Pour the batter into the loaf tin and top with a little extra muesli.
- Bake for 40 mins or until a toothpick comes out clean.
- Allow to cool in the tin for 5 mins before taking it out to cool completely, then serve.
