Broccoli Rabe & Shiitake Stir-fry with Poached Eggs

I always start the day with a few serves of vegies because I just find it sets me up for a much more productive day and I’m more likely to continue with eating well when I include them. This is one of my favourite combinations with immune-boosting shiitake mushrooms and broccoli rabe … breakfast of champions.

Broccoli Rabe & Shiitake Stir-fry with Poached Eggs

Start your day right with immune-boosting shiitake mushrooms and broccoli rabe – a true breakfast of champions!

Ingredients

  • 8 free-range eggs
  • 1 tbsp vinegar
  • 2 tbsp olive oil
  • 1 bunch broccoli rabe
  • 250g shiitake mushrooms
  • 2 cloves garlic
  • 2 tbsp tamari
  • 4 tbsp kimchi (optional)

Method


  • In large saucepan bring water to fast simmer. Add vinegar then break eggs in carefully one at a time and poach to your liking.
  • In wok or saucepan, stir-fry broccoli rabe, mushrooms and garlic. If they stick, add a splash of water to keep them cooking. As vegetables soften, add tamari and stir well.
  • Remove from heat and divide between four bowls. Top with poached eggs and kimchi and serve immediately.
