This super-comforting porridge is perfect for a light and healthy breakfast. It can also be prepared the night before and stored in the fridge for even faster breakfast planning. Get creative with your toppings and use fresh fruits that are in season. I love pumpkin seeds for a bit of added crunch and texture.

Ingredients

  • ¾ cup almond milk
  • 1 tsp coconut oil
  • 2 tbsp almond meal
  • 2 tbsp chia seeds
  • 1 tbsp flax seeds
  • ¼ tsp cinnamon
  • 1 tsp golden syrup

  • Toppings
  • 2 tbsp mixed berries
  • 1 tbsp coconut
  • 1 tbsp pumpkin seeds
  • 1 tsp chia seeds

Method


  • Combine all ingredients in saucepan and bring to boil over medium heat, stirring frequently.
  • Reduce heat to simmer and stir for a few mins until porridge thickens.
  • Top porridge with berries, coconut, pumpkin seeds and chia seeds.
