Raw Gado Gado Recipe

Gado gado is a beautiful yet simple Indonesian dish. In this raw version, the peanut sauce becomes the hero and with each bite you can enjoy a different texture and flavour as you make your way around the dish.

Ingredients

  • Peanut Sauce
  • 1 cup crunchy peanut butter
  • 1 kaffir lime leaf, finely sliced
  • Juice 1 lime
  • 1 tsp salt
  • 1 tbsp coconut sugar
  • 1 garlic clove
  • Water, enough to make a thick dressing-style sauce

  • ½ head cauliflower
  • 1 carrot, cut into thin strips
  • 1 cup baby spinach or other leafy green
  • 1 yellow capsicum, sliced into thin strips
  • ½ head broccoli, cut into florets
  • 1 cup red cabbage, thinly sliced
  • 1 red chilli, sliced
  • 2 tbsp raw peanuts, chopped

Method


  • Place peanut sauce ingredients in high-speed blender and blend, adding water slowly until the consistency of thick sauce.
  • Place cauliflower in food processor and blend for just a moment until it resembles rice or couscous.
  • Arrange all ingredients in sections around bowl.
  • Top with raw peanuts and chopped chilli.
