Raw Gado Gado Recipe
Gado gado is a beautiful yet simple Indonesian dish. In this raw version, the peanut sauce becomes the hero and with each bite you can enjoy a different texture and flavour as you make your way around the dish.

Ingredients
- Peanut Sauce
- 1 cup crunchy peanut butter
- 1 kaffir lime leaf, finely sliced
- Juice 1 lime
- 1 tsp salt
- 1 tbsp coconut sugar
- 1 garlic clove
- Water, enough to make a thick dressing-style sauce

- ½ head cauliflower
- 1 carrot, cut into thin strips
- 1 cup baby spinach or other leafy green
- 1 yellow capsicum, sliced into thin strips
- ½ head broccoli, cut into florets
- 1 cup red cabbage, thinly sliced
- 1 red chilli, sliced
- 2 tbsp raw peanuts, chopped
Method
- Place peanut sauce ingredients in high-speed blender and blend, adding water slowly until the consistency of thick sauce.
- Place cauliflower in food processor and blend for just a moment until it resembles rice or couscous.
- Arrange all ingredients in sections around bowl.
- Top with raw peanuts and chopped chilli.
