Tortilla de Patatas Recipe

Ingredients

  • 600–700g potatoes, a mix of white & sweet potato, washed & cubed
  • 1 tbsp butter or ghee
  • 1 large brown onion, diced
  • 4 cloves garlic, chopped
  • 1 tsp fresh thyme leaves
  • ¼ tsp sea salt
  • 8 eggs

Method


  • Preheat oven to 180°C
  • Place potato on baking tray, drizzle with a little oil and bake for 20 mins.
  • Add butter and onion to oven-safe frypan and sauté until soft.
  • Add garlic and thyme and cook for 1 min or until fragrant.
  • Whisk together salt and eggs, and pour into pan.
  • Remove potatoes and add to mix, then return pan to oven and bake for 15–20 mins, or until egg is set.
  • Serve as tapas, or as part of meal with delicious salad.
