Easy to prepare ahead and very impressive for guests or a special treat for your family. Plus, it’s also great for breakfast. Make it super decadent and layer with coconut sorbet instead of yoghurt.

Layered Strawberry Chia Pudding

Need a quick dessert? This chia pudding is easy to prepare ahead and very impressive, not to mention delicious!

Ingredients

  • 6 large strawberries
  • 1 tsp pure vanilla extract
  • 1 cup milk (coconut, dairy, nut, rice or soy)
  • 1 tbsp maple syrup, more to taste
  • ¼ cup chia seeds
  • Fresh strawberries, coconut yoghurt & chopped pistachios, to serve

Method


  • Place strawberries, vanilla, milk and maple syrup in high-powered blender or food processor and blend until smooth. Pour into glass or ceramic bowl and add chia seeds. Stir for 30 secs until chia seeds start to swell and no longer sit dry on top or sink to bottom.
  • Place in fridge for 4 hours or overnight until it reaches a thick pudding-like texture.
  • Layer in serving glasses with sliced fresh strawberries, coconut yoghurt and chopped pistachio nuts.
