Wasabi or not Wasabi?
No sushi experience would be complete without a bit of wasabi to add spice. It is possible though that even the most ardent sushi lover may never have eaten wasabi at all according to a new report. Real wasabi comes from the root (rhizome) of a plant called Wasabi japonica which is related to plants like cauliflower, broccoli and mustard. The chemicals that give wasabi its heat are not present until the plant is chopped releasing enzymes that catalyse reactions producing the heat. However, traditionally wasabi has only been grated as it is needed because the flavour and heat breaks down quickly; in about fifteen minutes.
