Veggie & Brown Rice Timbales

Ingredients

  • Olive oil
  • 1 small onion, finely chopped
  • 1-2 garlic cloves, crushed & chopped
  • 3 cups mixed vegetables (peas, corn kernels, spinach, small pieces broccoli or cauliflower)
  • 1 cup cooked brown rice
  • 6 organic eggs
  • 1/3 cup organic milk
  • 1/3 cup grated cheddar cheese
  • Pumpkin seeds, for topping

Method


  • Preheat oven to 200°C and grease a 12-hole muffin tray with a little olive oil.
  • Heat a little olive oil in a frying pan on medium heat. Add onion and garlic and cook for a few mins before adding the vegetables. Cook until tender.
  • Add cooked rice to the pan and gently combine.
  • In a medium bowl, whisk eggs and milk and then stir through cheese.
  • Spoon vegetable and rice mixture evenly out into the muffin holes, then pour egg mixture over the top of each.
  • Sprinkle with pumpkin seeds and then put in the oven for 30 mins until timbales are cooked through, or when a skewer comes out of the centre cleanly.
