  • Patties
  • 1 onion, finely diced
  • 1 cup mushrooms, finely chopped
  • 1 cup hemp flour
  • 450g firm tofu, puréed into “ricotta”
  • 1 tbsp Dijon mustard
  • 1 tbsp tomato paste
  • 1 tbsp vegan stock powder
  • 420g tin brown lentils, drained & rinsed
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp tamari
  • 1 tbsp maple syrup

    Burger
  • 4 wholemeal bread rolls
  • 4 handfuls of mixed leafy greens, roughly chopped
  • ½ red onion, thinly sliced
  • 1 carrot, grated into long thin strips
  • 8 tbsp cashew sour cream or your favourite sauce

Method

  • Preheat oven to 200ºC and line a tray with baking paper.
  • Heat a frying pan and dry sauté the onions until soft.
  • Add the mushrooms and sauté until soft, then add a tablespoon of water and cook until water evaporates.
  • Place all the patty ingredients in a bowl and mix well.
  • Form the mixture into 4 large patties (they will be soft but will firm up in the oven) and place on the lined baking tray.
  • Bake for 15 minutes then turn the patties and cook for another 15 minutes.
  • To assemble, place some mixed leafy greens on half the bun base, top with a patty, more leafy greens, carrots and red onion. Add the cashew sour cream or sauce, place on the bun lid and serve.
