Turkey, Lemon and Feta Meatballs

This is a high-protein meal or snack and a tasty way to “hide” extra vegie nourishment. It’s one very versatile recipe that you can make into meatballs, sausage rolls or hamburgers. They can be pre-prepared and frozen, and are great for parties and school lunchboxes.

Ingredients

  • 500g turkey or chicken mince
  • 1 clove garlic, finely chopped
  • 1 small red onion, finely diced
  • 2 tbsp finely diced fresh mint or parsley leaves
  • 1 small carrot, finely grated
  • 1 small zucchini, finely grated
  • 1 egg, lightly beaten
  • Zest 1 lemon
  • ¼ cup fresh breadcrumbs (wholegrain or gluten-free)
  • 100g feta cheese, crumbled or cubed
  • Salt & pepper, to taste

Method


  • Preheat oven to 180ºC.
  • In large mixing bowl or food processor, mix together all ingredients until well combined.
  • Roll small or large balls and place on baking tray lined with baking paper.
  • Bake for 20–30 mins or until cooked through and browning on top. Serve warm or cold.
