Tuna & White Bean Salad

Ingredients

  • 1 bag mixed lettuce leaves
  • 185g tin tuna
  • 1 tin cannellini beans
  • 60g jar sundried tomatoes plus 4 tbsp sundried
  • tomato oil
  • 60g feta
  • ½ red onion, thinly sliced
  • 1 tsp balsamic vinegar
  • Juice & zest 1 lemon
  • Salt & pepper, to taste

Method


  • In a small bowl, combine oil, balsamic vinegar, lemon juice and zest, salt and pepper. Set aside.
  • In a large serving bowl, scatter lettuce leaves and top with tuna, beans, sundried tomatoes, feta and red onion.
  • Pour dressing evenly over the salad and toss well. Serve immediately.
