Ingredients
- 1 bag mixed lettuce leaves
- 185g tin tuna
- 1 tin cannellini beans
- 60g jar sundried tomatoes plus 4 tbsp sundried
- tomato oil
- 60g feta
- ½ red onion, thinly sliced
- 1 tsp balsamic vinegar
- Juice & zest 1 lemon
- Salt & pepper, to taste
Method
- In a small bowl, combine oil, balsamic vinegar, lemon juice and zest, salt and pepper. Set aside.
- In a large serving bowl, scatter lettuce leaves and top with tuna, beans, sundried tomatoes, feta and red onion.
- Pour dressing evenly over the salad and toss well. Serve immediately.
