Takeaway-Style Chicken Roast Recipe

Who doesn’t love good roast chicken? This is my version of a healthy takeaway or BBQ-style roast and you will not be disappointed — perfection on a plate. This recipe is so easy there’s absolutely no good reason to buy takeaway chicken again.

Ingredients

  • Marinade
  • ¼ cup macadamia oil
  • 1 tbsp rice-malt syrup or honey
  • 1 tsp smoked paprika
  • 1 tsp dried thyme leaves
  • 2 tsp sea salt
  • Ground black pepper, to taste

  • 1 large chicken

Method


  • Preheat oven to 180°C.
  • In small bowl, mix together ingredients for marinade until well combined. Baste chicken all over with half of mix.
  • Place chicken breast side up in preheated oven or on rotisserie if you have one.
  • After 30 mins or so, remove from oven and baste again with remaining marinade.
  • Return to oven and roast until chicken is cooked to perfection. The time this takes will vary depending on size of chicken, but work off 30 mins per 500g at 180°C.
  • Once cooked, rest chicken for 5–10 mins uncovered, then carve and serve.
  • Note: Add lots of vegetables and slices of lemon to your roasting dish.
