Sweet potatoes are such easy vegetables to roast. When baked without oil they crisp up and become a delicious, comforting snack that, when paired with the tartare, becomes unforgettable!

Ingredients
- 2 sweet potatoes, cut into chips
- Salt

- Tartare Sauce
- ½ cup gherkins, finely chopped
- 2 tbsp capers, finely chopped
- ½ red onion, diced
- Handful parsley, stalks & leaves chopped
- 1 cup egg-free mayonnaise

- 2 handfuls salad greens
- 1 lemon
Method
- Place pesto ingredients in food processor and pulse until consistency is smooth.
- Place flaxseed crackers on platter, spread with pesto and top with onion, olive, rocket, tomato and basil.
- Sprinkle with pinch of salt and serve.
