Ingredients
- 8 rice paper rounds
- 8 lettuce leaves
- 8 baby buk choy leaves
- 3 baby cucumbers, sliced with a peeler lengthwise
- 3 spring onions, sliced in half lengthwise & through the middle
- 1 small carrot, julienned
- 1 small carrot, julienned
- 8 coriander stems
- 1 roast chicken breast, sliced
- ½ cup hoisin sauce
Method
- Prepare the rice paper rounds as per package directions.
- Divide the salad and chicken between the rounds, drizzle over a tsp of hoisin sauce and roll them up.
- Place remaining sauce in a bowl and enjoy.
