Stuffed Baked Potatoes

This quick and tasty meal packs a nutritious punch. Sweet potatoes are full of beta-carotene goodness, which is not only important for strengthening the immune system but also supports the health of your eyes, mucous membranes and skin. Sweet potatoes are a great source of fibre, too. Onions are a beneficial food for hayfever sufferers as they are rich in quercetin, a flavonoid, with antihistamine and anti-inflammatory properties. Onions also contain substances that help improve immunity and enhance liver function.
