Stewed Rhubarb, Orange and Ginger

Stewed rhubarb and ginger is good for your digestion, a great source of dietary fibre and beneficial for preventing constipation. It also boasts an array of important nutrients such as vitamin K, calcium, potassium and magnesium.

Ingredients

  • 2 bunches rhubarb, chopped, leaves removed
  • Juice & zest 2 oranges
  • 1 heaped tbsp grated ginger
  • ΒΌ cup water
  • 1 tbsp honey

Method


  • Place rhubarb, orange juice and zest, ginger and water in saucepan.
  • Bring to the boil, then allow to simmer for 5 mins, covered.
  • Stir through honey, then pour into medium jar.
  • Keep in fridge.
  • Delicious served with natural yoghurt, muesli or on porridge.
