Ingredients
- 1 cup water
- 1½ cups coconut milk
- ½ tsp cinnamon
- 1 tsp vanilla powder or 1 scraped pod
- 1 cup Red Tractor White Quinoa, rinsed
- 1 fresh banana or other seasonal fruit, chopped
- 1 tsp Red Tractor Chia Seeds Black
- Dash raw honey (optional)
- Almond or coconut milk, for serving
Method
- Place water, 1 cup of coconut milk, cinnamon, vanilla and quinoa in a saucepan on high heat. Bring to the boil then reduce to simmer for 10–12 mins or until liquid is absorbed.
- Add remaining ½ cup coconut milk, stir and allow to cool to desired temperature (can be eaten hot or cold).
- Top with banana, chia seeds, honey and a dash of almond or coconut milk, then serve.
- Tip: If you have leftovers, simply cover and place in fridge with a dash of extra coconut milk for a bircher-style breakfast the next day.
