Ingredients
- 4 Mission Super Soft Wraps
- 100g ham, chopped
- 1 tbsp red capsicum, chopped, or ¼ cup semi-dried tomatoes, chopped
- 95g tin corn kernels, drained
- 1 cup cheddar cheese, grated
- 2 eggs
- 300mL milk
- Freshly ground pepper & salt, to taste
Method
- Preheat oven to 180˚C.
- Heat Mission Wraps on high in a microwave oven for 20 secs. Transfer to board, stack wraps and cut through 4 at a time. Cut into circles using 11cm round cutter. While warm, press wraps into 12 × ½-cup capacity greased muffin pans.
- Combine ham, capsicum and corn in bowl then divide mixture between the 12 cups. Top with sprinkle of cheese.
- Whisk eggs and milk together and season with freshly ground pepper and salt. Pour egg mixture into wrap cups and bake for 15–20 mins or until golden and set. Remove from oven and allow to cool for 5 mins before removing from muffin tin.
- Serve warm or cool completely before storing in airtight container in refrigerator. Pies will keep well for 3 days refrigerated, or in freezer for up to 3 months.
