Ingredients

  • 1 cup McKenzie’s Red Lentils
  • 1 small onion, finely sliced
  • ½ tsp turmeric powder
  • ½ tsp chilli powder
  • 2 medium-sized tomatoes, diced

  • Seasoning
  • 1 tbsp vegetable oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 2 tsp Clive of India Authentic Curry Powder
  • 1 clove garlic, crushed
  • McKenzie’s Sea Salt Grinder, to taste

Method


  • Add lentils, onion, turmeric, chilli and tomato to saucepan with enough water to just cover the lentils. Bring to boil and simmer until lentils are soft, approx. 20 mins. Add more water if required. Mash mixture and set aside.
  • In frypan, heat oil and add seasoning ingredients. Fry until flavour releases and mustard seeds start popping, approx. 3 mins. Add to lentil mix, stir and season if required.
  • Serve with steamed basmati rice and roti bread.
