Ingredients
- 1 whole cauliflower, cut in florets
- Salt & cracked black pepper, to taste
- 300mL Liddells Lactose Free Full Cream Milk
- 1 tbsp olive oil
- 1 tbsp plain flour
- 1 cup Liddells Lactose Free Shredded Cheese
- ¼ cup toasted hazelnuts, chopped
- 2 tsp finely chopped fresh thyme (optional)
- 2 tbsp finely chopped parsley
- 2 tsp lemon zest
Method
- Steam or microwave cauliflower for 3–5 mins until just tender, season to taste. Place in single layer in serving dish and keep warm.
- Place milk, olive oil and flour in cold saucepan all at same time, then bring to boil over medium heat, whisking constantly until thick, smooth and glossy. Stir in cheese until melted.
- Pour cheese sauce over cauliflower. Scatter with hazelnuts, thyme, parsley and lemon zest. Serve immediately.
- Note: The hazelnuts can be substituted with fresh or panko or dried breadcrumbs and cooked in the oven for 15 mins or until breadcrumbs are golden.
