Ingredients

  • 5 eggs
  • ⅓ cup Natvia Natural Sweetener
  • 1 tsp vanilla extract
  • ½ tsp nutmeg
  • Zest 1 orange
  • 1L Camel Milk
  • Knob butter, softened
  • 200g apricot jam
  • 1 brioche loaf sliced (other breads will work, too)

Method


  • Lightly grease shallow ovenproof baking dish and preheat oven to 170°C.
  • Whisk eggs, sweetener, vanilla, nutmeg and orange zest together in large bowl, gradually adding camel milk to form custard base.
  • Spread butter and jam on brioche slices.
  • Place one layer of bread in baking dish. Pour enough custard base to just cover it. Repeat with more layers of bread and custard until either baking dish is full or you run out of bread. (Gradually adding bread and custard base in this manner helps custard to soak well into bread.)
  • Sprinkle top with extra Natvia.
  • Bake in oven for about 45 mins or until pudding sets. Remove from oven and stand for 5 mins before serving.
