Seaweed and Sesame Salad

Considered one of the healthiest foods on the planet, seaweed, a fibre-rich sea vegetable, is a member of the algae family and comes in a trio of autumnal colour: red, brown and green. Sea vegetables may not usually rank high on your Grocery-shopping list, but they’re a fantastic source of vitamins and also help to alkalise the body. Pick up some seaweed from your local healthfood store or Asian grocer and serve this beautiful salad on its own or alongside fish.

Ingredients

  • 25g dried wakame seaweed
  • 60mL apple-cider vinegar
  • 60mL tamari
  • 1 tbsp sesame oil

  • 6 drops stevia liquid
  • 1 tsp grated ginger
  • 1 tbsp freshly squeezed lemon juice
  • 1 garlic clove, minced
  • 1 carrot, grated
  • 2 tbsp coriander, leaves only, chopped
  • 1 tbsp toasted sesame seeds, to serve

Method


  • Place seaweed in small bowl and cover with water. Soak for 5 mins, then drain and rinse under running water, squeezing out excess water.
  • In medium bowl, mix remaining ingredients except sesame seeds, and toss to combine well. Add seaweed.
  • Sprinkle with toasted sesame seeds and serve.
