Ingredients
- 1 cup San Remo CousCous
- 1 barbecued chicken breast, shredded
- 1 bunch broccolini, blanched & chopped
- 60g baby spinach
- 2 tbsp olive oil
- Salt & pepper, to taste
- ½ avocado, sliced
Method
- Cook San Remo CousCous according to packet directions in large bowl. Add chicken, broccolini and spinach.
- Add olive oil and season with salt and pepper.
- Toss together and serve topped with sliced avocado.
