Roasted Cherries & Vanilla Cream on Toast

How about dessert on toast? This luscious treat will make you wish you ate every meal on toast. It’s also a great way to put your leftover Christmas cherries to good use!

Ingredients

  • Roasted Cherries
  • 300g fresh cherries, pitted
  • 2 tbsp caster sugar
  • 2 tsp vanilla paste
  • 2 tsp balsamic vinegar
  • Vanilla Cream
  • 125g smooth ricotta
  • 125g mascarpone
  • 1 tbsp caster sugar
  • 1 tsp vanilla paste
  • Toast
  • 4 thick slices quality fruit loaf

Method


  • Preheat oven to 200ºC and line a tray with baking paper.
  • Place the cherries in a bowl with the other ingredients and toss until well coated.
  • Tip the cherries onto the tray and cook for 15 mins then stir gently and cook for a further 15 mins. Remove and let cool to room temperature.
  • Meanwhile, whisk the vanilla cream ingredients together in a mixing bowl until thickened.
  • Toast the fruit loaf then dollop the vanilla cream onto each toasted slice and pile the cherries on top.
  • Drizzle with the sweet juices from the tray to serve.
  • Note: You can roast other fruits, such as berries, in the same way, just watch the cooking times.
