How about dessert on toast? This luscious treat will make you wish you ate every meal on toast. It’s also a great way to put your leftover Christmas cherries to good use!

Ingredients
- Roasted Cherries
- 300g fresh cherries, pitted
- 2 tbsp caster sugar
- 2 tsp vanilla paste
- 2 tsp balsamic vinegar
- Vanilla Cream
- 125g smooth ricotta
- 125g mascarpone
- 1 tbsp caster sugar
- 1 tsp vanilla paste
- Toast
- 4 thick slices quality fruit loaf
Method
- Preheat oven to 200ºC and line a tray with baking paper.
- Place the cherries in a bowl with the other ingredients and toss until well coated.
- Tip the cherries onto the tray and cook for 15 mins then stir gently and cook for a further 15 mins. Remove and let cool to room temperature.
- Meanwhile, whisk the vanilla cream ingredients together in a mixing bowl until thickened.
- Toast the fruit loaf then dollop the vanilla cream onto each toasted slice and pile the cherries on top.
- Drizzle with the sweet juices from the tray to serve.
- Note: You can roast other fruits, such as berries, in the same way, just watch the cooking times.
