Red Papaya Salad Recipe

Lush, delicious and bursting with nutritional goodness, this red papaya salad is a beautiful brightly coloured dish with a tropical flavour that your family are sure to enjoy. Great for a summer barbecue or a weeknight meal, this rainbow salad will leave you feeling delightfully nourished.

Ingredients

  • Dressing
  • 5 tbsp fresh lime juice
  • 3 tbsp coconut sugar
  • 2 tbsp vegan fish sauce (or tamari sauce)
  • ½ tbsp dark miso paste
  • 4 cloves garlic, minced
  • Salad
  • 2 cups Chinese cabbage, shredded
  • 1 red papaya, peeled, halved, seeded & chopped
  • ½ bunch fresh coriander leaves
  • ½ bunch fresh mint leaves
  • 2 green onions, very thinly sliced
  • 1 fresh red chilli, thinly sliced on a diagonal
  • 2 tbsp salted peanuts, roughly chopped
  • 2 tbsp fried shallots
  • 1 tbsp white sesame seeds

Method


  • Whisk the dressing ingredients together and set dressing aside.
  • Place all the salad ingredients and the dressing in a large bowl, toss and serve.
