Quick & Healthy Egg Muff in Bites

Ingredients

  • 1 tbsp olive oil
  • 250g Sunny Queen Farms The Odd Eggs
  • Ready-to-Pour Egg Mix
  • ¼ cup sliced red onion
  • 1/3 cup grated cheese (alternatively use crumbled feta)
  • ¼ cup fresh parsley, finely chopped
  • ¼ cup fresh chives, finely chopped
  • Salt & pepper, for seasoning

Method


  • Preheat oven to 170°C.
  • Lightly oil mini muffin tin with olive oil using paper towel.
  • Pour the egg mix into cups until ¾ filled.
  • Evenly divide onion, cheese, parsley and chives into cups, season with some salt and pepper and stir slightly.
  • Bake at 170°C for 15-20 mins.
  • Remove from pan and garnish with parsley and chives.
