Ingredients
- 1 tbsp olive oil
- 250g Sunny Queen Farms The Odd Eggs
- Ready-to-Pour Egg Mix
- ¼ cup sliced red onion
- 1/3 cup grated cheese (alternatively use crumbled feta)
- ¼ cup fresh parsley, finely chopped
- ¼ cup fresh chives, finely chopped
- Salt & pepper, for seasoning
Method
- Preheat oven to 170°C.
- Lightly oil mini muffin tin with olive oil using paper towel.
- Pour the egg mix into cups until ¾ filled.
- Evenly divide onion, cheese, parsley and chives into cups, season with some salt and pepper and stir slightly.
- Bake at 170°C for 15-20 mins.
- Remove from pan and garnish with parsley and chives.
