Ingredients
- 400g spaghetti
- 200g bacon, diced
- 250g Sunny Queen Farms Scrambled Egg Mix
- ⅔ cups grated parmesan (⅓ for sauce, ⅓ for garnish)
- 2 tbsp finely chopped parsley
- 1 tbsp extra-virgin olive oil
- Salt & pepper, for seasoning
Method
- Cook pasta in a large pot of boiling salted water following the packet instructions.
- Meanwhile, heat oil in a non-stick frypan over medium heat and fry diced bacon for 2-3 mins or until crispy.
- Drain pasta and add to pan, mixing it with the bacon
- On low heat add 250g Sunny Queen Farms Scrambled Egg Mix and combine with pasta and bacon.
- Add parmesan, salt and pepper to pan and stir until creamy.
- Plate and sprinkle with parmesan and parsley.
