Quick & Easy Spaghetti Carbonara

Ingredients

  • 400g spaghetti
  • 200g bacon, diced
  • 250g Sunny Queen Farms Scrambled Egg Mix
  • ⅔ cups grated parmesan (⅓ for sauce, ⅓ for garnish)
  • 2 tbsp finely chopped parsley
  • 1 tbsp extra-virgin olive oil
  • Salt & pepper, for seasoning

Method


  • Cook pasta in a large pot of boiling salted water following the packet instructions.
  • Meanwhile, heat oil in a non-stick frypan over medium heat and fry diced bacon for 2-3 mins or until crispy.
  • Drain pasta and add to pan, mixing it with the bacon
  • On low heat add 250g Sunny Queen Farms Scrambled Egg Mix and combine with pasta and bacon.
  • Add parmesan, salt and pepper to pan and stir until creamy.
  • Plate and sprinkle with parmesan and parsley.
