Savoury broccoli, leek and zucchini quiche

Ingredients

  • ½ cup chopped broccoli
  • ½ cup sliced leek
  • 1½ cups grated cheese
  • ¼ cup self-raising flour
  • 1 tbsp Kfibre
  • Salt & pepper, to taste
  • 4 eggs
  • 1½ cups milk
  • ½ cup sliced zucchini
  • Parsley, to garnish

Method


  • Heat oven to 200°C and grease a 30cm baking dish.
  • Place the broccoli, leek, cheese, flour, Kfibre and salt and pepper in a bowl. Mix well then scatter over the base of the greased baking dish.
  • Combine the eggs and milk in a bowl and whisk well. Pour over the vegetables and top with sliced zucchini.
  • Bake for 40–45 mins until golden and puffy and serve fresh out of the oven.
