Ingredients
- ½ cup chopped broccoli
- ½ cup sliced leek
- 1½ cups grated cheese
- ¼ cup self-raising flour
- 1 tbsp Kfibre
- Salt & pepper, to taste
- 4 eggs
- 1½ cups milk
- ½ cup sliced zucchini
- Parsley, to garnish
Method
- Heat oven to 200°C and grease a 30cm baking dish.
- Place the broccoli, leek, cheese, flour, Kfibre and salt and pepper in a bowl. Mix well then scatter over the base of the greased baking dish.
- Combine the eggs and milk in a bowl and whisk well. Pour over the vegetables and top with sliced zucchini.
- Bake for 40–45 mins until golden and puffy and serve fresh out of the oven.
