Pomegranate and Radish Salad with Balsamic Dressing

Ingredients

  • 150g mixed salad leaves
  • 1 pomegranate, arils removed
  • 4 baby cucumbers, thinly sliced
  • 2 large tomatoes, cut on different angles
  • 4 radishes, thinly sliced
  • 1 Spanish onion, thinly sliced
  • 2 tbsp pomegranate molasses
  • ¼ cup olive oil
  • 4 tbsp red-wine vinegar
  • 2 tbsp balsamic vinegar
  • Salt & pepper, to taste

Method


  • Lay the ingredients out on a platter.
  • Combine dressing ingredients in a jar, shake well and pour over salad.
