This simple, protein-rich and grain-free peanut butter pudding is sure to become a crowd favourite. Dessert doesn’t get much simpler than this!

Ingredients
- 3 tbsp peanut butter
- 3 tbsp rice malt or maple syrup
- 1 free-range egg
Method
- Preheat oven to 180ºC.
- Mix the peanut butter, 2 tbsp sweetener and egg to combine then add the batter to a ramekin.
- Mix the remaining tbsp of sweetener with a tbsp of water. Pour over the batter and bake for 12–15 mins. At 12 mins, the centre will be a bit gooey, at 15 mins it should be cooked through.
- Serve warm.
- Tip: This is lovely made with other nut butters too (almond, hazelnut etc.).
