Ingredients
- 12 Medjool dates, pips removed & soaked for 10 mins in some warm water
- ½ cup sunflower seeds
- ½ cup pepitas
- 2 tbsp flaxseeds
- 1 cup desiccated coconut, plus extra to roll
- 2 tbsp tahini
- 2 tbsp raw honey or pure maple syrup
- 1 tsp vanilla extract
- 1 heaped tbsp raw cacao powder
Method
- Add sunflower seeds, pepitas, flaxseeds, desiccated coconut, coconut oil, tahini, honey, vanilla and cacao to your food processor and blend until you have a finer consistency.
- Add drained Medjool dates and process until well combined. You can add a little of the date water if too dry.
- Roll into medium-sized balls (around a tbsp of mixture) and then roll in some coconut.
- Place in the fridge for 30 mins, then enjoy. Store in an airtight container in the fridge for a week.
