This is an extremely delicate way to use miso. It certainly doesn’t punch you in the face with flavour — it’s more of a background flavour, but we love them.

- 2 tbsp white miso
- Water, enough to ¾ fill a saucepan
- 1 star anise
- 2 tbsp apple-cider vinegar
- 4 eggs
- Avocado, halved & sliced
- Grainy bread of choice
Method
- Place miso, water, star anise and vinegar in a medium-sized saucepan and bring to a simmer.

- Cook for 3 to 4 mins, remove with a slotted spoon and drain well.
- Meanwhile, toast the bread.
- To serve, top toast with miso-poached eggs and place the avocado on the side.
