Ingredients
- 2 tbsp massaman curry paste
- 2 tbsp rice-bran oil
- 1 tin coconut milk
- 1 cauliflower
Method
- Add oil to a high-sided saucepan and cook the paste over low heat for about 2 mins.
- Add the coconut milk and stir to combine.
- Place the cauliflower in the saucepan and baste it, then cover with a lid. Continue to baste every 3–4 mins or until cauliflower is tender, approx. 18 mins.
- Tip: If you want to make your paste, simply combine garlic, galangal, shallots, lime juice, chilli, cinnamon, turmeric, ground coriander, cumin and cloves in a blender and blend until smooth.
