Ingredients

  • 3 large zucchini
  • Olive oil
  • 2 shallots, extra for topping
  • 4 garlic cloves, minced
  • Pinch red chilli flakes
  • Pinch sea salt & black pepper
  • Packet uncooked spaghetti
  • ½ cup coconut cream
  • ½ cup shaved parmesan
  • Juice 1 large lemon
  • Handful basil leaves

Method


  • Grate zucchini on a large-hole grater. Place grated zucchini in a tea towel or cheesecloth and squeeze out all of the liquid
  • In a large frying pan, heat some olive oil over medium heat. Add zucchini, shallots, garlic, red chilli and sea salt and pepper. Cook for 15 mins
  • Cook spaghetti according to packet instructions. Save ½ cup of cooking water
  • Pour the spaghetti into your frying pan and toss through
  • Add ½ cup of cooking water, coconut cream, parmesan and lemon juice and toss through.
  • Serve topped with extra shredded parmesan, shallots, basil leaves and pine nuts.
