Ingredients
- 3 large zucchini
- Olive oil
- 2 shallots, extra for topping
- 4 garlic cloves, minced
- Pinch red chilli flakes
- Pinch sea salt & black pepper
- Packet uncooked spaghetti
- ½ cup coconut cream
- ½ cup shaved parmesan
- Juice 1 large lemon
- Handful basil leaves
Method
- Grate zucchini on a large-hole grater. Place grated zucchini in a tea towel or cheesecloth and squeeze out all of the liquid
- In a large frying pan, heat some olive oil over medium heat. Add zucchini, shallots, garlic, red chilli and sea salt and pepper. Cook for 15 mins
- Cook spaghetti according to packet instructions. Save ½ cup of cooking water
- Pour the spaghetti into your frying pan and toss through
- Add ½ cup of cooking water, coconut cream, parmesan and lemon juice and toss through.
- Serve topped with extra shredded parmesan, shallots, basil leaves and pine nuts.
