Lemon and Cranberry Green Beans

At Christmastime I love to cook dishes that are full of Christmas colours; this dish is the perfect example. The bright green beans and cranberries will add lovely Christmas colours to your buffet.

Ingredients

  • 200g green beans, topped & tailed
  • 3 tbsp water
  • 2 tbsp butter
  • Pinch sea salt & pepper
  • Zest 1 lemon
  • ¼ cup dried cranberries
  • 2 tbs slivered almonds

Method


  • Place beans along with water and butter to large frying pan. Cook over medium heat for 2 mins, until beans are just cooked through and are bright green.
  • Toss through salt, pepper, lemon zest, cranberries and slivered almonds and cook for 1 min.
  • Serve on a platter, topped with some lemon zest and slivered almond.
