Ingredients
- Tin jackfruit, shredded, or ½ fresh jackfruit, cooked & shredded
- Large handful bean sprouts
- Handful mint, roughly chopped
- Handful coriander, roughly chopped
- ½ red onion, thinly sliced
- 1 chilli, sliced
- ¼ cup roughly chopped roasted cashews
- 1 lime, cut into wedges

- Dressing
- 2 tbsp tamari
- 2 tsp honey
- 4 tbsp lime juice
- 1 clove garlic, minced
- 1 tsp ginger, grated
Method
- Combine dressing ingredients in jar and shake well.
- Place jackfruit in bowl and cover with half of salad dressing and toss.
- Add remaining ingredients and dressing and toss gently.
- Serve topped with roasted cashews and wedge of lime.
