Ingredients
- 2 boxes Explore Cuisine Red Lentil Rigatoni
- 2 cups cashews, soaked in water for 2 hours
- 3 cloves garlic
- 1 tsp salt
- 1 tsp black pepper
- 2 chopped dried chilli peppers
- 2 vegan sausages, sliced, or sliced zucchini
- Jar store-bought marinara sauce Olive oil
- 2 bags vegan mozzarella
- 1 bag vegan parmesan
- Fresh chopped basil
- Crushed red pepper
Method
- Cook Explore Cuisine Red Lentil Rigatoni according to package directions.
- Preheat the oven to 200°C.
- Add soaked cashews, garlic, salt, pepper and chopped chillies to a food processor.
- Add vegan sausage to a pan to brown.
- Mix the cooked pasta, olive oil and vegan cheese in a bowl.
- Add oil and sauce of choice to the bottom of a cake pan and begin to assemble rigatoni standing upright.
- Pour on the cream sauce, marinara, more cheese and sausage.
- Place in oven for 30 mins.
- Release from the cake pan, cut, serve and enjoy!
